Triple chocolate cookies!

Hello my lovelies!

For the past 6 weeks I haven't had the time to bake anything that I really wanted to. As soon as I got back from teacher training I got back in the kitchen and started to bake! I wanted something chocolatey so I went for triple chocolate cookies - yum! They went down very quickly and my sister even said that these were her favourites out of everything that I have baked. 100g soft brown sugar
100g golden caster sugar
100g unsalted butter
1 egg
1 tsp vanilla extract
225g plain flour
140g milk chocolate
85g white chocolate, cut into small chunks
85g plain chocolate chips 

Pre-heat your oven to gas mark 6

1. Line your baking tray with greaseproof paper
2. Mix together both sugars and the butter
3. Add the egg, vanilla extract and flour to the sugar mixture and combine
4. Melt 70g of the milk chocolate using the ban marie method and add this to the rest of your mixture
5. Add in the white chocolate chunks and the plain  chocolate chips. Mix well to make sure they distribute evenly
6. Make balls out of your mixture (you can choose your size). I made 12 out of mine and they were fairly big. I could only fit 6 on a tray so I had to do two loads
7. Bake in the oven for 10-15 minutes or until pale golden brown. Remember that they will still be soft to touch and they will harden once removed from the oven!
8. Leave to cool for 15 minutes
9. Melt the other 70g milk chocolate and drizzle this over all of your cookies
10. Either put the cookies in the fridge for the chocolate to harden or leave them out to cool naturally. Then you can enjoy them with a nice glass of milk or a cup of tea!
