Strawberry and cream cupcakes!

Hello my lovelies!

The strawberries this year are absolutely gorgeous, so I thought I would make the most of them and find a recipe including them! I stumbled across this strawberry and cream cupcake recipe in one of my recipe books and they looked divine. I am really happy with the way they turned out and they made me feel very British. This is a lovely simple recipe which has the wow factor in terms of decoration.

110g unsalted butter
110g self-raising flour
110g caster sugar
2 large eggs 
1 tsp vanilla extract
Strawberry jam
400ml double cream
6 large strawberries
Icing sugar (optional)

Pre-heat your oven to gas mark 5

1. Cream together the sugar and butter
2. Add in the eggs and the vanilla extract and mix
3. Spoon the mixture into the cupcake cases
4. Put in the oven for 15 minutes or until golden brown. Test with a toothpick. If it comes out clear then they are ready
5. Leave to cool on a wire rack
6. Once cool cut out the middle of the cupcake and fill it with strawberry jam (see picture)
 7. Put the lid of the cake back on to cover the jam
8. Whip all of your double cream until it holds its form
9. Spoon into a piping bag with a large star nozzle. Pipe the cream onto the top of the cupcakes
10. Cut your strawberries in half and add a half onto each of the cupcakes
11. Dust the cupcakes with icing sugar as the finish touch and then tuck in!
