Pavlova recipe!

Hello my lovelies!

Last week I went round my Auntie and Uncle's house because it was the last time I could see them before moving to Kent. I asked them what dessert they wanted and they decided on a pavlova. Making a meringue is a new and fun challenge and I was really happy with the results! It was all devoured very quickly so it must have been a hit. Little tip for you, bake it in a cake tin. I found that this controlled it from spreading, gave it a good rise and cooked it perfectly. Just remember to grease the sides so it is easier to get out at the end!

4 egg whites
250g caster sugar
1 tsp white wine vinegar
1 tsp cornflour
1 tsp vanilla extract
400g strawberries
350ml double cream

Pre-heat your oven to gas mark 2

Step 1: Get a 23cm loose bottomed cake tin and grease the sides or line with greaseproof paper
Step 2: Whisk the egg whites until they form stiff peaks
Step 3: Whisk in the sugar a tablespoon at a time. It should look glossy by the end!
Step 4:Whisk in the vinegar, cornflour and vanilla extract
Step 5: Spoon mixture into the cake tin. Make the sides higher and create a dip in the middle. This is where the cream will go later
Step 6: Place in the oven for 1 hour
Step 7: After the hour is up, turn off the oven and leave to cool in there with the door ajar
Step 8: While this is cooling, whisk your double cream until it forms stiff peaks
Step 9: Spoon the cream on top of your meringue and spread it across the top
Step 10: Cut up your strawberries into halves and place this on top of the cream!
