Lemon drizzle cake!

Hello my lovelies!

My Mum is a massive lover of fruit based cakes instead of chocolate so I decided to make her a lemon drizzle cake as a treat. I will admit, I really don't like lemons but even I was partial to a slice of this! It hasn't swayed me completely from chocolate (let's face it, nothing ever will) but it makes a lovely alternative. This recipe was super easy to make and my Mum really enjoyed it, so here is the recipe!



Ingredients:
3 Eggs
170g Self Raising Flour
170g Caster Sugar
170g Butter
1 tsp Baking Powder
110g Icing Sugar
2 Lemons

Pre-heat oven to gas mark 4

Step 1: Mix the eggs, flour, sugar, butter, baking powder and the zest of 2 lemons (to zest a lemon just use a fine grater over a bowl)
Step 2: Grease a tin or line with greasing paper and pour mixture in. Bake in the oven  for 30 - 45 minutes. 
Step 3: To make your drizzle mix together the icing sugar and juice of the lemons that you got your zest from.
Step 4: Whilst your cake is still hot, poke holes in it with a skewer or a knife and then pour over the drizzle.
Step 5: Leave the drizzle to soak into the cake and then enjoy!
