Brownie cake!

Hello my lovelies!

Brownies have always been my arch nemesis in baking. I never seem to get them right...but I am good at making cakes. When I saw this recipe for a 'brownie cake' I thought this would be a good way to lure me into baking brownies. This actually turned out really well and I feel confident enough to make regular brownies now! The decoration was my idea and I am happy with the way it turned out. The recipe uses dark chocolate and I love raspberries with dark chocolate, they go really well together. As for the white chocolate I wanted to give the cake an added depth in terms of visuals, and I think it worked! Anyway, here is the recipe. Like always please tweet me a picture or tag me on instagram if you try and make this!

Ingredients
175g unsalted butter
225g dark chocolate
200g caster sugar
3 medium eggs
65g plain flour
50g white chocolate (optional)
Punnet of raspberries (optional)

Pre-heat oven to gas mark 4/180C

Step 1: Grease a 24cm cake tin with butter and then line with greaseproof paper
Step 2: Place 175g chocolate, the butter and the sugar into a heatproof bowl and melt it using the ban marie method (saucepan of boiling water over a low heat, bowl on top of the saucepan to melt contents)
Step 3: Once that has melted leave it to cool
Step 4: Separate your eggs.
Step 5: Whisk the egg yolks into your chocolate mixture. Once mixed add the flour.
Step 6: Chop up your remaining chocolate and add this to your mixture too.
Step 7: Whisk your egg whites in a separate bowl until they form stiff peaks.
Step 8: Gently fold your egg whites into your chocolate mixture until fully combined.
Step 9: Pour the mixture into your lined tin and bake for 35 minutes. Leave to cool when it is done.
Step 10: Melt your white chocolate either in a microwave or using the ban marie method again.
Step 11: Once melted get a spoon of the white chocolate and drizzle it from a height so you get the cross effect. You can use as much or as little as you like.
Step 12: Decorate with raspberries and enjoy!
