Traditional shortbread!

Hello my lovelies!

I made these for my parents because they were coming back off of holiday and there was nothing sweet in the house. I thought I would make them a biscuit to have with a cup of tea when they got back. These are super easy to make and they taste delicious! I will definitely be making these again. Might even add some chocolate once lent is over...

200g unsalted butter
100g regular sugar
1 tsp vanilla extract
300g plain flour

Pre-heat your oven to 160C/gas mark 3

 Step 1: Mix together the butter and sugar until the mixture is smooth and pale.

 Step 2: Add in the vanilla extract to the mixture

 Step 3: Gently mix in the flour. Try not to overwork it otherwise the biscuit will not be crumbly.

 Step 4: Using your hands squeeze the mixture into a dough. Roll out your dough onto a floured surface until it is about 5mm thick. Use your cutter to make the biscuits *tip - if you do not have a cutter just use the base of a small glass instead*

 Step 5: Once cut transfer your shapes onto a lined baking tray and place in the fridge for 15 minutes to rest.

 Step 6: After 15 minutes take them out of the fridge and sprinkle each biscuit with a pinch of sugar. Put in the oven for 15-20 minutes.

 Step 7: Once golden brown remove them from the oven and place on a wire rack to cool.

Once cool you can decorate however you wish. I left them as they were because I think that they tasted delicious. The vanilla definitely came through! A super easy bake and a nice treat for all of the family.
