Honey cake!

Hello my lovelies!

This week I decided to make a honey cake. Honey is one of those things that I like, but I rarely use. So I went on a search for a cake that used honey and found this Devonshire honey cake recipe. I really like the texture of this cake and it uses some different ingredients which are fun to experiment with. Here is the recipe if you want to give it a go!

250g honey
2tbsp honey to glaze
225g unsalted butter
100g dark muscovado sugar
3 large eggs
300g self-raising flour

Pre-heat oven to gas mark 3

Step 1: Butter a 20cm loose bottomed tin
Step 2: Put the butter, sugar and honey into a medium sized pan. Melt this slowly over a low heat.
Step 3: Once it has all melted boil it under a high heat for one minute.
Step 4: Leave this mixture to cool for 20 minutes to prevent the eggs from cooking when they are mixed in.
Step 5: Beat in the eggs using a wooden spoon.
Step 6: Sift the flour into a bowl and make a well in the centre. Pour in the honey mixture and mix until you have a runny batter.
Step 7: Pour the batter into your tin and place in your oven for 50 minutes- 1 hours.
Step 8: While this is baking get your 2tbsp of honey and put this into a pan. Place under a low heat until it has got slightly runnier.
Step 9: When your cake is ready get a pastry brush and brush the honey on top of the cake.
Step 10: Leave to cool and then decorate how you wish. I bought these cute bee and ladybird decorations to add to the theme!
