Terry's chocoalte orange cookies!

Hello my lovelies!

This week I made another recipe from What Jessica Baked Next's blog and these were delicious! Anything with Terry's chocolate orange in is a winner for me. These were super easy to make and didn't require any difficult to source items so these are perfect for anyone to make!

110g unsalted butter
200g light brown sugar
1 medium egg
1 tsp vanilla extract
165g plain flour
Pinch of salt
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
30g cocoa powder
200g Terry's chocolate orange

Pre-heat your oven to 190C/375F/Gas mark 5

 Step 1:  Cream the butter, sugar and vanilla together until it is all mixed in

 Step 2: Add the egg into the mixture and combine this using a whisk

Step 3: Now add the flour, salt, baking powder, bicarbonate of soda and cocoa powder until it all comes together into a dough

Step 4: Cut up 200g of Terry's chocolate orange into chunks

Step 5: Add the chunks of chocolate to the mixture and combine it into the dough

Step 6: Divide the mixture into balls, I used my hands because I didn't have an ice cream scoop. If you want them to be uniform I would advise using one! Place the balls on a baking tray that has been lined with greaseproof paper. Make sure the balls are spaced out so they have room to expand! Place them in the oven for 10-12 minutes. When they have expanded and are cracking on the top it means they are done

Step 7: Take the tray out and leave the cookies to cool on the tray. They will harden as they cool down so don't worry if they are not firm when they come out of the oven!

Step 8: After 5 minutes or so transfer the cookies from the tray to a cooling rack

Once they have cooled you can decorate them however you wish and eat the goods! I chose to decorate them with a segment of Terry's chocolate orange on them and ate one with a glass of milk. Send me a picture if you try to make these too!
