Dark chocolate and raspberry cupcakes!

I wanted to experiment with flavours this week and what better way to start than dark chocolate and raspberry. Two classic combinations that compliment each other well! Unfortunately I started lent this week and I have given up chocolate, which meant that I didn't get to eat many of these. However, the ones I did eat I really enjoyed! I liked that they had a ganache on them too because it gave me something else to experiment with. It is now added to my repertoire!

Ingredients
125g unsalted butter
200g dark chocolate
300g raspberry jam
2 large eggs
40g caster sugar
150g self-raising flour
100ml double cream
1 punnet of raspberries

Pre-heat your oven to 180 degrees/gas mark 4

Step 1: Melt your butter using the ban marie method

Step 2: Once melted add in 100g of your dark chocolate and melt this too. Once melted take it off of the heat and stir with a wooden spoon to fully combine the two.

Step 3: Add the jam, sugar and eggs to your melted chocolate mixture and mix them together until they are all combined.

Step 4: Add your flour to this mixture and mix until it is all combined. I would recommend using an electric whisk for this bit!

Step 5: Add your mixture into cupcake cases. My mixture made 15 cupcakes just for reference. Put these in your pre-heated oven for 25 minutes.

Step 6: While your cupcakes are cooking it is time to make the ganache. In a saucepan you need to add the cream and the rest of your dark chocolate (100g). You need to bring it to the boil and remove it from the heat once this has happened. Whisk it in the bowl until it is thick and smooth. Then leave it to cool.

Step 7: Once the ganache has cooled you need to whisk it again just before you put it on your cupcakes. This will ensure that the ingredients are still properly mixed before application.

Step 8: Remove your cupcakes from the oven. Leave them to cool in the tins for 5 minutes. After this remove them from the tins and leave them to cool on a wire rack.

Step 9: Once cooled you can add the ganache on top. I used a tablespoon to add it and then used the back to smooth it down.

Step 10: Finally add a raspberry to garnish the cupcakes and to add an extra layer of raspberry!
