Healthy banana and blueberry muffins!

Hello my lovelies!

This week I decided to bake something a bit healthier and I found a recipe for banana and blueberry muffins. This recipe doesn't have any butter in it and uses brown sugar. They each only have 0.8g of saturated fat too - how good!

300g self-raising flour
1 tsp bicarbonate of soda
100g light brown sugar
50g porridge oats plus 1tbsp for topping
2 medium bananas
284ml buttermilk*
5 tbsp light olive oil
2 egg whites
150g blueberries

*I searched everywhere for buttermilk but I could not find it. So I searched the internet and found that you can substitute it for greek yoghurt and milk. If you do this then just split the measurements evenly between the two and mix them together.

Pre-heat oven to 180C/160C fan/gas mark 4.

 Step 1: Mix together the flour, bicarbonate of soda, porridge oats and the sugar (take away 1 tbsp from the sugar and keep for later). This should just turn into a big powder.

 Step 2: In a bowl mash the bananas until they are smooth.

 Step 3: Mix the buttermilk/substitute, oil, egg whites and banana in a separate bowl until they are all combined. Once this is combined add this to your original powder mixture and mix with a wooden spoon until it starts to come together.

 Step 4: Add in all of your blueberries to your mixture and mix them up making sure they are spread throughout the mixture.

 Step 5: Line cupcake trays with cases and then spoon your mixture into the cases.

 Step 6: Take the extra tbsp of oats and sugar that you put to one side. Dust each of the muffins with these ingredients before you put them in the oven. Once this is done place them in the oven for 18-20 minutes.

 Step 7: Remove them once they are golden brown. Test them with a cake tester too to make sure they are cooked right through! If it comes out clear then they are ready.

Step 8: Enjoy your muffins and appreciate how cool they look inside!
