Halloween cookies!

Hello my lovelies!

This week I baked some Halloween cookies - these were super fun and let me get creative. If you like the look of them then the recipe is down below!

  • 125g unsalted butter
  • 125g golden caster sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 250g plain flour
  • red/black food colouring (optional)
  • 1/2 tsp baking powder
  • Halloween cookie cutters
  • Writing icing, colours of your choice

 Step 1: Mix the golden caster sugar and unsalted butter together in a bowl until light and fluffy.

 Step 2: Beat the egg and add this into the mixture. Add the vanilla extract and a couple of drops of food colouring into the mixture. Whisk this up using an electric mixer until there are no lumps.

 Step 3: In a separate bowl add the baking powder and plain flour together.

 Step  4: Add the flour mixture into the sugar mixture. Kneed this into a dough using floured hands.

 Step 5: As the mixture starts to get firmer kneed it into a ball.

 Step 6: Wrap the dough in cling film and leave it to cool in the fridge for a minimum of 1 hour.

 Step 7: Pre-heat your oven to gas mark 3/325F/170C. Get a rolling pin and roll your dough to around 1/4 thickness. Cut out your shapes using your Halloween cookie cutters. Keep re-using your dough until you cannot get anymore shapes out of it!

 Step 8: Cover your baking tray in greaseproof paper and place your shapes on the tray. Put them in the over for around 15 minutes.

 Step 9: After 15 minutes, if golden brown, remove from the oven and leave to cool.

 Step 10: Once cool get out your range of writing icing and get decorating!
